Happy Friday, everyone! Today I am going to share with you two things that are going to make your great Friday even better. First, I will be telling you about a giveaway that I am hosting on Instagram. And second, I am going to wow you with the perfect, guilt free, pasta salad for your upcoming 4th of July barbecue. If you are anything like me, you might not eat a whole lot of pasta because you would prefer to use your carb calories on other foods. Well, now you can have your pasta and eat it too! If you haven’t heard of Banza Chickpea Pasta you will thank me for introducing it to you.
Banza describes their pasta the best when they declare, “Banza is pasta 2.0. Ditch the empty carbs in wheat noodles, and treat yourself to double the protein, four times the fiber, and nearly half the net carbs”. Their pasta is made in a nut free, soy free, gluten free, and egg free facility. Just a heads up, their plain pasta is milk free their macaroni and cheese does contain milk. While I like chickpeas, for those who don’t, this pasta doesn’t taste like it was made from chickpeas, so you can sneak it into your picky eaters’ meals without them ever knowing.
The number one thing I am in love with about this pasta, aside from the slashed carbs, double protein, and high fiber, is the fact that their ingredient list is short, and real. You can pronounce all the ingredients, and you don’t have to guess if it was created in a lab, or if it is real food. This pasta is real food. I have only worked with the ziti so far, and on their website, they recommend that if you are eating their pasta cold to cook it for a few extra minutes, but I found that with this particular pasta I had to cook it less time to maintain its integrity. Not a big deal, it worked, and tastes great!

And now I am going to give you the best pasta salad ever. Of course, part of its charm is the fact that it is made using Banza pasta, but the flavors are so good. I will be honest, this pasta salad tastes best the second day when it has had time to sit and marinate. Generally, I like pasta salad while it is still fresh and room temperature, but this pasta salad is better after it is refrigerated. The only other tips I need to give you for this salad are don’t over cook the pasta or it will get mushy, and if you want your boiled eggs to peel easier add a little bit of baking soda to the water before boiling them. Now take your new-found pasta freedom, sit back, relax, and enjoy!

Better for You Pasta Salad

4 cups Banza Ziti Chickpea Pasta – Cooked (approximately 1 box)
1 cup celery – diced
½ cup sliced black olives
2 teaspoons jarred jalapenos – diced
2 eggs – chopped
½ cup mayo (I used olive oil mayo)
2 teaspoons yellow mustard
½ teaspoon salt
¼ teaspoon ground black pepper
Bacon bits for garnish (optional)
Bring a medium pot of salted water to a boil
Add a box of Banza Ziti Chickpea Pasta; Stir immediately
Boil for 5 minutes stirring twice
Drain and rinse with cold water
Allow the pasta to firm up while you are chopping your ingredients
On a cutting board cut the ziti into thirds like ditilini
In a large bowl combine the celery, black olives, jalapenos, eggs, and pasta
Gently fold in the mayonnaise, mustard, salt, and black pepper
If you choose you can sprinkle with bacon bits before serving
