Honey 2.0…….
When I was a kid my absolute all time favorite sandwich was peanut butter and honey. I could have eaten it for every meal, every single day. I can’t lie, I loved honey so much that my mom would buy me sticks of honey from a local seller that I would just eat plain as a treat. Once again, I wish that Sugar 2.0 had been around when I was younger because my mom did not put a cap on our sugar intake. We had sugar in our breakfast, lunch, snacks, and dinner in one way or another. I can’t really blame her, I don’t think she knew any better.
Back to honey! A few weeks ago, I introduced you to Maple 2.0 and now I am super excited to introduce to you Honey 2.0. It is real honey with added fiber, just like its sister products Original Sugar 2.0, Sugar 2.0 + Probiotics, and Maple 2.0. It is tasty and a healthy way to reduce sugar and add prebiotic fiber into your diet. Also, like the other Sugar 2.0 products, it can be used 1:1 just like any other honey. It makes me happy that I can enjoy peanut butter and honey sandwiches again. And I didn’t even feel guilty when I liked the spoon while making this recipe.
These peanut butter squares are so easy to make and only takes 4 ingredients. The only down side to these squares is that they aren’t really counter stable. If they get warm, they get soft. You could still send them in your kids’ lunch boxes, but I would still keep them in the refrigerator. I like to put them in the freezer to start out just, so they set quickly, but after that I store them in a container with parchment between the layers and keep them in the refrigerator. Or, if you want to take the time, it is handy to wrap each square individually in little parchment paper squares.
These squares are so super easy to make that I know you are dying to run into the kitchen right now and whip up a quick batch. Chocolate Chia Peanut Butter & Honey Squares

Ingredients
1 cup crunchy natural peanut butter
½ cup Honey 2.0
1 ¼ cup uncooked old fashioned oatmeal
2 Tablespoons +1 teaspoon chocolate chia
Directions
In a medium microwave safe bowl dump in your peanut butter and microwave for 30 seconds on high
Add your honey to the melted peanut butter and microwave another 30 seconds
Stir in the uncooked oats
Then fold in 2 Tablespoons of the chocolate chia
Place the mixture on a large piece of parchment paper and flatten out with the back of your spoon
Straighten the sides by pushing the parchment paper against the mixture
Sprinkle the other teaspoon of chocolate chia over the top
Fold the parchment paper over and press down
Move to the freezer and chill for 30 minutes
Cut into squares once it is firm
Keep in a container in the fridge with parchment paper separating the layers of squares
