Snack Time – Baked Buffalo Cauli Bites

When I receive a product from a company I like to post my review and/or recipe within two weeks, but I also don’t like to just throw anything together. I only share products that I love, trust, and believe in, and I want my recipes to convey that. I feel so bad because the product that I am introducing to you today came to me about a month ago. Luke’s Organics sent me a giant box of probiotic tortilla chips and they are so incredibly good that I didn’t want to just do some chip and dip recipe, I wanted it to taste amazing, and stand out. Yesterday, on a whim, I decided to give an idea a try and bam, the recipe I am sharing with you today was born.

I was only lucky enough to try one type of their tortilla chips, but they have a huge variety to choose from. Here is what the company has to say about their products, “We have quite a few Lukes in the extended Luke’s Organic family: children and adults who have been diagnosed with Celiac disease or gluten sensitivities. We all got tired of gnawing through snacks that looked like hamster litter, tasted like tree bark and were riddled with ingredients we couldn’t pronounce. What’s satisfying about that? Nothing. So, we did something about it. Our snacks are organic, allergen-free and decidedly delicious for kids, grownups and those weird ones in between”. These products are amazing for people who may have these types of allergies. They are also certified Vegan, certified organic, and non-GMO!

cauli+bites4In today’s recipe I used Luke’s Probiotic Sprouted Seeds and Grains Tortilla Chips. Their ingredient list is superior to other tortilla chips on the market. “INGREDIENTS: Luke’s Organic Sprouted Grain & Seed Blend (White Corn, Sprouted Purple Corn, Sprouted Sorghum, Millet, Brown Rice, Chia, Sprouted Quinoa, Sprouted Amaranth, Carrot Fiber), Luke’s Organic Sustainable Oil Blend (Sunflower, Safflower and/or Red Palm Olein), Sea Salt, Organic Inulin, Bacillus Coagulans GBI-30 6086” Thanks to the fact that these seeds and grains are sprouted, and that they contain probiotics, you will be able to digest this crunchy snack much easier.

I wanted to keep today’s recipe simple, and as pure as the chips that I am going to be coating it in. I used minimal ingredients and loaded up the flavor. These bites look like popcorn chicken, but they are made with cauliflower. They aren’t like your other cauli bites floating around the food world, these are better, tasty, and super easy. The only tip I really need to give is on reheating. If you don’t eat the entire batch (guilty) then you will want to allow the bites to cool completely before putting them in a sealed container. When you reheat them just pop them in the oven for about 15 minutes to crunch them up, and warm them through. The microwave will make them soggy. Be sure to make plenty, you won’t want to share, then you can sit back, relax, and enjoy!

Baked Buffalo Cauli Bites

2-4 servings

cauli+bites22Ingredients

1-11-ounce bag frozen cauliflower

1 ½ teaspoon Tapitao hot sauce

¼ teaspoon salt

¼ teaspoon garlic powder

¼ cup crushed Luke’s Organic Probiotic Sprouted Seed and Grain Tortilla Chips (Measure after crushing)

Directions

Preheat the oven to 400’f

Place the frozen cauliflower on a parchment covered baking sheet and roast for 30 minutes

Remove the cauliflower from the oven and allow to slightly cool before dumping into your food processor, or blender

Add the hot sauce, salt, and garlic powder

Blend until smooth

Place the crushed chips in a small bowl

Using a measuring teaspoon scoop rounded spoonful’s of the cauli mixture and gently round it with your hand

Toss it in the bowl of crushed chips and swirl it around until coated (This will also help to create perfect round balls)

Place the coated cauli bites on a parchment covered baking sheet and bake for 30 minutes

Serve immediately
