You may have noticed that there is a huge buzz in the food world about a magical new dough that was created by Weight Watchers. The only ingredients that they call for are all-purpose flour and Greek yogurt. There are hundreds of different variations, and people are using the dough for all kinds of recipes, but the most common use is for bagels. I can’t lie I was a little annoyed that they used white flour, but that seems to be the only type of All Purpose flour you can find in the store. Did you really think I would let that slide? Not a chance. Welcome to the world of wheat all purpose flour and it is just as easy as buying the bag already mixed.
My version is going to give you a little extra fiber, a little bit of sweet, just the right amount of cheese, and some spice. What I like about these bagels is that they are loaded with protein and they are super easy to make. For all my Vegan, and plant-based friends, hang in there. I am working on a dairy free version, but currently it is still a work in progress. Most of the plant-based yogurts are not thick enough for the dough to work. It is super sticky to work with. But for the rest of you, these are a must try. You are going to fall in love and want to make them all the time. I created this flavor combo for sandwiches and it was a great choice. Cut them in half, stack them with all your favorite sandwich goodies and you are on your way.
Today you are also going to learn how to make your own all-purpose flour. If you are like me and try to steer clear of white flour at all costs, you will be glad to find out how easy it is to make your own. Plus, I like mixing up my own because it isn’t as salty as the stuff that you buy in the store. Are you ready to have your mind blown? All you need is 1 cup of wheat flour (I like to use white wheat because it is softer) 1 ¼ teaspoon of baking powder, and ¼ teaspoon of salt. Yep, that is it. It is truly that easy. Now you will never be caught without all-purpose flour ever again.
There really isn’t much more to explain about these bagels. They are truly that easy. I can see a lot more variations coming your way in the future. I made mine fairly mellow with Black Forest ham, cheddar cheese, lettuce, and chili lime dressing. But first things first, get in that kitchen and bake a batch so you can sit back, relax, and enjoy!

Jalapeno & Cheddar Cheese Bagels

1 cup white wheat flour measured properly + 1 ¼ teaspoon baking powder + ¼ teaspoon salt = all-purpose flour
2 Tablespoons Sugar 2.0
1 cup Greek yogurt
¼ cup shredded cheddar cheese
1 Tablespoon chopped jarred jalapenos
Avocado oil (Optional)
In a small bowl combine the flour, baking powder, salt, and Sugar 2.0
In a medium bowl stir together the Greek yogurt, cheese, and jalapenos
Fold the flour mixture into the yogurt mixture until all the ingredients are combined
Dump the dough on to a lightly floured surface and kneed the dough several times, folding the sides in several times, until it is no longer sticky
Cut the dough into four pieces and roll each piece into an 8-inch-long rope
Bring the two ends of each dough rope together to make a circle and pinch them together. Try to make sure that the thickness is as equal as possible all the way around
Place all four bagels on a cookie sheet covered in parchment paper
If you are going to use avocado oil, now is the time. I used the tiniest amount on my finger and lightly smeared it on top of each bagel to help with browning
Preheat the oven to 350’f
Once the oven is preheated bake the bagels for 25 minutes
Remove from the oven and allow to cool slightly before transferring them to a cooling rack
