Lately I have been talking a lot about balance when it comes to food. Well, when it comes to everything really, but I think one of the hardest places that people find it difficult to achieve balance in eating. When you eat healthy, it doesn’t have to be an all or nothing mentality. You can enjoy healthy food that tastes good, and you can enjoy healthy food that has some little indulgent gems that may not be on the top of the chart of healthy but allowing yourself some simple pleasures creates a happy heart, and healthy mind. Putting to much stress on yourself when it comes to eating can be counterproductive. You don’t have to go crazy but allow yourself some freedom to enjoy the little things in life.
Before I get to today’s recipe, which is all about balance, I must fill you in on our first giveaway in February! This giveaway is HUGE! The company that I am hosting the giveaway for is Huel. I decided to do my own little test and see if Huel just worked great in baking, or if it would stand up to its claims for standing on its own as a meal. This morning I decided to drink my breakfast, and I only drank 2/3 of the container. About an hour later I finished it off. I didn’t feel full, like I had eaten a big breakfast, but I wasn’t hungry either. I didn’t have any cravings all morning. I decided to eat a normal lunch instead of drinking another shake, and I was only able to eat half. (A medium baked potato with some dark turkey meat.) Two and a half hours later I thought I would have a snack while I was waiting in the pickup line for my son at school. I only ate half of it. (It was a Farm and Oven 3 pack. Usually I eat those in seconds.) So, as of right now, I am pretty confident in saying that the formula they are using can absolutely reduce cravings and keep you from feeling hungry all day long.

I tried creating several recipes before I found the perfect mix. It is simple, tasty, tastes just like the real deal, and is packed with tons of good stuff. I always love it when I can make drop biscuits, or cookies, taking so much work out of baking, and that is what I have done with this recipe. You seriously can not go wrong with this recipe. They are only 68 calories, half the sugar, triple the protein, and a big boost of fiber. Chocolate Chip Drop Cookies

11 – 12 Cookies
2 Tablespoons split flax, or flax meal + ¼ cup hot water
½ cup Sugar 2.0
2 teaspoons vanilla flavoring
1 cup Huel Unflavored Powder (measure like you would measure flour. Approximately 2 ½ scoops)
1 teaspoon baking powder
2 Tablespoons mini chocolate chips
Preheat the oven to 350’f
In a medium bowl combine the flax and hot water and allow to gel for 2-3 minutes
Add the Sugar 2.0 and vanilla flavoring to the flax mix and stir well
Cream together the flax mixture with the Huel powder and baking powder until all the dry ingredients are incorporated (It will be sticky)
Fold in the chocolate chips
Drop dough onto a parchment covered cookie sheet
Bake in the preheated oven for 10 minutes
Remove and allow to cool on the cookie sheet
Store in a sealed container in the fridge
