Chocolate Chia Giveaway……
I have always considered December to be the month of giving, but I think I need to stand corrected. While December was an amazing month full of giveaways, it was kind of expected with the holiday season and everything. But now that the giveaways are overflowing into the new year I am declaring January the new month of endless giving. These amazing companies that are willing to get their products out there for free, for you to try, that is incredible.
I love working with different companies, and trying new products because it really puts my culinary creativity to the test. It also encourages me to broaden my recipe horizons for all my readers. This morning I was asked by a brand to tell them about myself. I told them the basics, but when I got to the end I had a revelation. I’m not just creating these recipes for me, and my family, any more. I am creating them for all of you, so you can feel the freedom of enjoying all the foods that you think you can’t, or shouldn’t eat. And if there is something you shouldn’t eat, I will do everything in power to find an alternative!

For the giveaway they will be sending out some of their dark chocolate covered chia seeds. A dream, right? I was skeptical, until I tried them, oh my goodness. They are the most fiber filled little chocolate pearls you have ever eaten! They can be sprinkled on anything. As you will see in my “recipe” I used them on chocolate dipped strawberries.

I guess I can’t really call today’s creation a recipe. It is more of a method, or idea. But whatever you choose to call it, you need to call it delicious. These are simple, white chocolate dipped strawberries with bumped up fiber, protein, and Omega 3, thanks to the Salba dark chocolate chia that covers the bottom. They add a little bit of crunch, a lot of flavor, and are so much healthier then chocolate sprinkles that you might normally use. I know that the white chocolate isn’t the best on the healthy meter, but we are all about balance. If you would like you can swap out the white chocolate for dark chocolate and you will have a dark chocolate dream. My suggestion would be to make these for Valentine’s day so you can sit back, relax, and enjoy!

White Chocolate & Dark Chocolate Chia Dipped Strawberries

8 medium strawberries washed and dried
1/3 cup white chocolate (Or dark chocolate) chips
½ teaspoon coconut oil
1 Tablespoon Salba Dark Chocolate Chia Seeds
Put your white chocolate chips and coconut oil in a small bowl
Heat in the microwave in 30 second increments
After 90 seconds they should be soft enough that you can stir them until the chocolate is smooth
Use a smaller bowl to hold your chocolate covered chia seeds
Carefully dip your strawberries, ¾ of the way to the stem, using the back of a spoon to remove any excess
Quickly dip in the chia seeds and place on parchment paper
The chocolate hardens quickly so you must dip fast or the chia seeds won’t stick
If the chocolate begins to harden pop it back in the microwave for 30 seconds
