Right now, it is freezing cold in most parts of the United States, so I am going to try to bring a little bit of sunshine your way. Today I am going to share a cookie recipe with you that can be eaten raw, or cooked. (Admit it, we ALL love raw cookie dough) And I am also going to tell you about another giveaway that I am hosting on Instagram. I am letting you know now, if you don’t have an Instagram account, you need to get one. Even if it is just to enter these giveaways. I have several more coming up before the end of the month.
First, I want to tell you about the giveaway I am hosting. No Udder Protein is a protein blend that is dairy and soy free. It is Vegan, gluten free, and non-GMO. Sometimes people get bored just drinking protein shakes so we need to “shake” it up a bit. 😉 These cookies are Vegan, Dairy free, Egg free, Nut free, Gluten free, and Non-GMO. I know, you are probably thinking that they must taste like little hockey pucks. Wrong! They actually taste like funfetti cake mix! Here is the best part, they are only 48 calories, 1 gram of fat, 5 Net carbs, 4 grams of fiber, 4 grams of protein, and 4 grams of sugar. There is no way you can go wrong with these little babies. In saying that I am going to let you go enter the giveaway, so you can make these amazing little bites of heaven. Then you can sit back, relax, and enjoy!
What is your favorite way to use protein powder?
Vanilla Cake Protein Cookies

1 Tablespoon + 1 teaspoon chia flax mix + 2 Tablespoons + 2 teaspoons hot water*
½ cup Sugar 2.0
1 teaspoon vanilla flavoring
1 cup Vanilla No Udder Protein Powder (Measured like flour) or 5 scoops
½ teaspoon baking powder
2 teaspoons Salba Chocolate Chia*
Preheat oven to 350’f
In a small bowl combine the chia flax mix and water allow to sit for 2-3 minutes
In a medium bowl cream together the gelled chia flax “egg”, Sugar 2.0, and vanilla
Add the vanilla No Udder Protein Powder and baking powder and stir until completely combined
Fold in the chocolate chia seeds
Make dough balls, about 1 Tablespoon worth of dough, and place them on a cookie sheet covered in parchment paper
Lightly flatten them
Bake for 8-10 minutes until lightly browned
Remove from the oven and allow to cool for a few minutes before transferring the cookies to a cooling rack
*You can also use regular flax meal. I used a chia flax mix from Carrington Farms
*If you have never heard of chocolate chia I will be filling you in next week
