Portable Breakfast…..
Here we are, already three days into the new year. I know that a lot of people have made resolutions, once again, to eat healthier in the new year. I personally don’t like resolutions, they are generally made for failure. I prefer to set attainable goals for myself. No diets, no miracle cleanses, no crazy weight loss programs. Just eating right, as much as you can, enjoying the food you eat, and living life. If you get bogged down with trying to eat perfectly it usually doesn’t end well. So, I am here to make your options easier. Good food, some healthier than others, that is easy to make, and will help you reach your food goals, while still tasting amazing.
A few years ago, I created a Mini Egg White Omelet recipe. It was very reminiscent of many of the others you see floating around. This year I decided to switch things up a bit. I made bite size omelets. They are like popcorn egg bites, instead of popcorn chicken. You can heat, and eat, as you are on your way out the door. And they are packed with good stuff. These egg bites are loaded with mushrooms, spinach, bacon, and a little bit of cheese. I even threw in an extra egg yolk for the beneficial choline that it delivers. They are literally the perfect bite.
I have found that four bites, plus a green smoothie, piece of toast, some fruit, or oatmeal, makes a complete breakfast. If you are eating them on your way out the door, take a full serving. Get this, SEVEN bites, that is half a batch, will only run you a measly 186 calories. I am serious. One serving packs in 13 grams of protein and just 3 grams of carbs. I know, seriously sounds like a breakfast dream come true. You can thank me later. 😉 I am going to recommend doubling the batch since you can keep them in the refrigerator for 5-7 days. And the NUMBER ONE TIP I can give you is grease your pans well. I don’t use cooking spray because of the TBHQ in it, so I just used coconut oil, and they wanted to stick. So, whatever type of oil you use, use it liberally. Now getting cooking so you can sit back, relax, and enjoy!

Loaded Omelet Bites

2 Servings (7 bites)
Ingredients
2 whole eggs
4 egg whites
½ Tablespoon milk (I used unsweetened vanilla almond milk)
1 slice of bacon – chopped up
½ cup mushrooms – diced
¼ cup raw spinach – chopped
¼ cup sharp cheddar cheese – shredded
Directions
Preheat the oven to 350’f
Grease 14 mini muffin tins liberally
In a bowl whisk together the whole eggs, the egg whites, and milk
Stir in the chopped bacon, diced mushrooms, chopped spinach, and shredded cheese
TIP: If you roll several spinach leaves together and cut them into ribbons it makes them easier to chop up.
Pour the egg mixture equally between the prepared muffin tins
Bake in the preheated oven for 20 minutes
Remove from oven and allow to cool slightly before removing from the pan
