As promised I am bringing you yet another Christmas cookie recipe and the second holiday giveaway that you have been looking forward to. I am really excited about this giveaway because it will enhance your baking experience, and make clean up, and measuring so much easier. I am over the moon about the fact that I have finally gotten my hands on this kitchen essential. In all honesty, I don’t know how I have gone so long without having one!
You may have already guessed, but the giveaway is for a Winton Essentials Ambrosial Pastry and Dough Mat! After using this mat I can tell you that it is way bigger then any other mat I have used, with just a dusting of flour cookies lift right off, and it is super easy to clean and store. “It all started with my daughter asking me to make a Sock Monkey Cake for my granddaughter’s birthday. I love activities where my creativity can run wild, so I decided to tackle the art of fondant. While rolling out the fondant, and having to reposition it many times due to it rolling off the back of a rectangular pastry mat, I decided that pastry mats should not be in the shape of a rectangle. So, days after a successful birthday party and the completion of a super cute Sock Monkey Cake, I went to work designing my own pastry mat. I then had to find a manufacturer, which was a challenge, but I found one. Months later I sold my very first Ambrosial Pastry and Dough Mat and it is loved by so many people!”

Now on to the recipe! This is probably the easiest sugar cookie recipe you will ever come across. I thought of altering it because they weren’t big and fluffy, but they were still soft, then my kids ended up eating all of them before the day was over. I am not even kidding. I turned around and they were gone! They are really picky when it comes to baked goods, so the fact that they loved them, and didn’t even wait for them to be frosted, says a lot. 😉 These sugar cookies don’t use any eggs, they have reduced fat thanks to the cashew milk, and reduced sugar. You can not go wrong with these. They will be super easy to roll out on your new Winton Essentials baking mat. Get baking so you can sit back, relax, and enjoy!

Do you frost or sprinkle your sugar cookies?
Simple Sugar Cookies

22 cookies (Depending on size)
Ingredients
½ cup butter (If you want to make these Vegan use Vegan Butter)
½ cup Sugar 2.0
2 teaspoons vanilla extract
2 Tablespoons milk (I used unsweetened vanilla cashew milk)
½ teaspoon baking powder
1 ¼ cup white wheat flour
Directions
In a medium bowl cream together, your butter and Sugar 2.0
Add in the vanilla, milk, and baking powder
Combine well
Fold in the flour until the mixture forms a ball
Chill while preheating oven to 350’ f (About 10 minutes)
Roll the dough out on a floured mat, or counter about ¼ of an inch thick
Use a jar, or cookie cutters, to cut out shapes and place them on a cookie sheet covered in parchment paper
Cook in the preheated oven 10 minutes
Place the cookies on cooling racks and allow to cool before frosting
NOTE: I left my dough in the refrigerator over night. When you take it out work it really well with your hands and it will roll out smooth. If you try and roll it hard it will take two rollings to make it soft enough to work with easily.

I have made this cookie dough recipe at least 5 times in the last month!
Out of those 5, 2.5 batches actually got put in the oven. I love that they are egg and dairy free. My daughter refers to them as “healthy cookies” because I actually let her eat the dough! (Something she’s never been allowed to do with traditional cookie dough, but sadly has caught me sneaking in bites of raw cookie dough way too many times.)
I love the dough, and being able to eat it raw without getting lectured by my 6 year old! My 6 year old enjoys being able to take a few bites of the “raw” dough, but loves these cookies even more when I put them in the oven! These have honestly been the only cookies baked in my house since you posted this recipe!
