On Monday I started rolling out my Christmas cookie recipes and have several more to follow. I don’t know if you would consider today’s recipe a Christmas cookie recipe, but it would be great to have on hand for Christmas morning. I know that my mom always made us eat a bowl of cereal before we could open our presents. These bars are so much healthier, and yummier, then any bowl of cereal could ever think about being. I love them, but was a bit skeptical about how my kids might feel about them. They went crazy. Loved them more than store bought bars. So, they are mom AND kid approved. That is a total win all the way around.
This recipe is insanely easy. It only contains three ingredients. Seriously, nothing hidden, nothing crazy, just three simple ingredients. Thanks to Love Grown these bars are organic, non-GMO, and gluten free. (Their cereals are also Vegan, but due to the use of honey, this recipe is not) Maddy and Alex are the creators of Love Grown cereals. I love that their cereals contain ingredients like garbanzo beans, navy beans, and brown rice. Now that you know how delicious, and healthy, their cereals are, and where to find them, we can get to all the yumminess that are these bars. The three ingredients are natural crunchy peanut butter, raw honey (If you want to make this vegan you can use maple syrup instead.), and Love Grown Oat Clusters Cocoa Goodness. (Ingredients: Certified gluten-free oats, cane sugar, canola oil, chocolate chips (chocolate liquor, sugar, soy lecithin, vanilla), sunflower seeds, flaxseed, natural vanilla flavor, cocoa (processed with alkali), sea salt.) These bars are literally as easy as 1-2-3. Just make sure you keep them wrapped, like any chocolatey bar you can wind up with quite a mess on your hands if you hold them unwrapped for too long. So, get in the kitchen, take 5 minutes to whip up a batch of bars, sit back, relax, and enjoy!

Cocoa Cluster and Peanut Butter Bars

4 large bars, or 8 small bars
½ cup natural crunchy peanut butter
¼ cup honey (See Vegan option above)
1 cup Love Grown Oat Clusters Cocoa Goodness granola
In a medium bowl melt the peanut butter for one minute in the microwave
Add the honey and heat the mixture for 30 more seconds in the microwave (This can also be done on the stove top)
Stir the honey and peanut butter mixture together to combine well and fold in the granola
Drop the granola mixture onto parchment paper and fold each side to cover the mixture with paper, firmly pat the mixture until it is solid and forms a rectangle
Gently fold up the ends and place in the freezer for 15-20 minutes
Cut into bars and store in the refrigerator
Note: Wrap the bars separately as shown in the pictures to keep them from sticking to each other or, separate them in layers with parchment paper.
