The Best Breakfast Cookies

By Angie Gouchenour

12 Cookies

breakfast cookie using Bob's Red Mill almond flour and Bobs Red Mill Paleo MuesliIngredients

¼ cup sweetener (I used Sugar 2.0)

¼ cup almond butter (I used homemade)

1/8 cup unsweetened apple sauce

½ teaspoon ground cinnamon

¾ cup Bob’s Red Mill almond flour

¾ cup Bob’s Red Mill Paleo muesli

2 Tablespoons chopped dark chocolate (I used 88%)

Preheat oven to 350’f

In a medium bowl cream together sweetener, almond butter, apple sauce, and ground cinnamon

Thoroughly combine the almond flour with the creamed mixture

Fold in muesli and chopped chocolate chunks

Using a small cookie scoop, scoop cookies dough onto a parchment paper covered cookie sheet

Lightly flatten each ball with your hand (They will not spread)

Bake for 8 minutes in preheated oven

Remove from the oven and allow to cool 5 minutes before transferring to a cooling rack

Once cooled keep them in a sealed container in the fridge for up to a week, or freeze them. Because of the moisture content they will mold quickly if left on the counter for more than a day or two, depending on the temperature of your house.

Note: These cookies will not brown on the top. But they will lightly brown on the bottom.

This blog has not been compensated for this post. I received the above products from Bob’s Red Mill to try for free. Instagram and Facebook do not have any affiliation with this post. Bob’s Red Mill will be shipping the product out to the winner once they are chosen. I only endorse products that I truly believe in.
