Tucked away – Corn Bread Muffins

Tucked away…..

Here is a recipe I found tucked away, from last year, inside my Corn Bread Stuffing post. If you have Thanksgiving like a true southerner you can’t have it without cornbread stuffing. AND if you are going to make authentic corn bread stuffing, you MUST have homemade Corn Bread Muffins. Plus, they are always good for pairing with all the steamy soups, hearty stews, and hot chilis you’ll be concocting this fall!

Corn Bread Muffins

6 muffins

½ cup stone ground wheat flour

½ cup corn meal 

2 teaspoon baking powder

Pinch of salt

2 Tablespoons Truvia zero calorie sweetener (Reduce to 1 Tablespoon if you want a more savory muffin)

2 Tablespoons unsweetened applesauce

2 Tablespoons egg whites

½ cup almond milk

Directions

Pre heat oven to 375’f

Spoon into muffin papers or sprayed muffin tins

Bake 15 minutes until toothpick can be removed with few moist crumbs

Cool on a cooling rack

85 calories each
