Just Delicious……
Today I am swamped with running around, and getting the house ready for new tenants to look at, not to mention getting ready to move, and looking at houses this weekend. BUT I am just too excited about this recipe not to share it today. I made it three days ago and it took everything I had to hold out this long. 😉 This recipe will blow your mind, and your taste buds. It is simple, it doesn’t require any cooking, and it is almost indescribable!
When I was little my dad would bring me something home in his lunch box a few times a week. Every day I would wait for him to come home, and would always dive into the lunch box as soon as he set it down hoping for something special. Sometimes he would bring home a small toy, or game, other times it would be something that one of the distributors would give him at the office, and sometimes it would be something to eat. One of my favorite treats that he would bring home was called Just Delicious Fudge. Even 30 years later I can absolutely remember the silky texture, and rich chocolate taste. The company started in 1976 in the Puget Sound area, where I grew up, and originally they only made rice pudding. In 1991 they decided to start making fudge, since they had done so well with the rice pudding. It was a success!
I have made variations of this type of fudge before, but this is by far the best one yet! It only uses 5 main ingredients with 1 optional ingredient. The pieces are large and will only run you 164 calories per piece. I know that sounds like a lot, but I was expecting them to be around 300 calories! And all the ingredients are clean, healthy, and figure friendly…. In moderation. This fudge is loaded with healthy fats, so one or two pieces, should be plenty. In all honesty, it is so rich that you probably wouldn’t be able to eat the entire batch, even if you wanted to.
This recipe doesn’t seem to go very well with all the Labor day cookouts that everyone is going to be having, but it is such an amazing dessert that it is good for any time! Believe it or not, holiday parties, and cookie exchanges, are just around the corner, so make sure that you tuck this recipe in your holiday file. But until take a few minutes to whip up a quick batch, then you can sit back, relax, and enjoy
PS. The optional ingredient is dried cherries. I threw them in for Debra, a fellow blogger and friend. (You should pop in and take a peek at her inspiring blog.) This fudge can stand on its own, but if you like a little something extra give the cherries a try.

Freezer Fudge

Ingredients
½ cup crunchy natural peanut butter
½ cup honey
¼ cup coconut oil – room temperature
4 teaspoons vanilla flavoring
2/3 cup unsweetened cocoa powder
½ cup dried cherries (Optional)
Directions
Line a pan with parchment, or wax paper (the size of your pan depends on the thickness of bar you want. The pan I used is 8×5 at the top.)
In a medium bowl cream together the peanut butter, honey, coconut oil, and vanilla
Stir the cocoa powder into the base until well combined
If you choose now you would fold in the cherries
Pour the fudge into the prepared pan and smooth out
Pop into the freezer for 20-30 minutes
Cut into squares and store in a sealed container
This fudge is not counter stable. Keep it in the freezer

Okay – I’m eating freezer fudge! 🙂 I can’t believe how easy it is. It really satisfied my sweet tooth with a very small piece, so can’t be much calories in it. I love it!
