60 Seconds or Less…..
As I promised yesterday I am bringing to you a super simple recipe that will satisfy even the naughtiest sweet craving. I don’t write on Saturdays very often, but yesterday I had a serious cookie/cake craving and I knew if I baked a batch of chocolate chip cookies it wouldn’t end well. This is the main reason that I love single serve recipes so much. There is just enough to satisfy whatever flavor you are searching for, but there aren’t any leftovers that can “accidentally” make their way into your hand, or mouth. 😉 Yesterday I was even nice enough to share with the kids, but they didn’t believe me that it was cake so I got it all to myself!
The second perk this recipe has is that it is ready in less than 60 seconds! It is cooked in the microwave for 30 seconds so if you can chop a piece of chocolate and stir together the other ingredients in 29 seconds, or less, you will have an ooey, gooey, treat sitting in front of you, and ready to eat, in no time flat. I was aiming for a chocolate chip cookie taste, which it has, plus the satisfying sponginess of a cake. Essentially you can have your cake, and eat it too.
With just 133 calories, 9 NET carbs, and 6 grams of protein you don’t need an excuse to treat yourself.
The one most important recommendation I can make for this cake to be pure perfection is the protein powder. Make sure that you are using a good tasting protein powder. Hopefully one that doesn’t taste like… well, protein powder. Your cake will taste like the powder you use. I use PES Science and they use vanilla bean in their powder, so the cake tastes just like that, vanilla bean. So, if you enjoy the powder you use, then your cake will be great! I am not a double chocolate fan, but if you are, and you have an awesome tasting chocolate protein powder then use that! I am sure it will be outstanding. I’m not going to suck up any more of your precious weekend babbling about this amazing cake. I’m going to let you go, and try it for yourself! That way, you can just sit back, relax, and enjoy!

Single Serve Chocolate Chunk Cake

2 Tablespoons good quality vanilla protein powder (I used PES science)
1 Tablespoon wheat flour
1 teaspoon Truvia zero calorie sweetener
¼ teaspoon baking powder
½ Tablespoon butter – softened
½ Tablespoon unsweetened applesauce
1 egg white or 3 Tablespoons liquid egg whites
1 square dark chocolate – chopped into chunks
Lightly butter a 10-ounce ramekin (It doesn’t take more than a tiny dab) You can also use a microwave safe plate if you don’t have a ramekin)
In a small bowl combine all the ingredients, it is ok if there are little chunks of butter in the batter
Pour the batter into the prepared ramekin
Scatter the chocolate chunks over the top pressing each one lightly into the batter so the top half is still exposed
Microwave for 30 seconds (If the middle is gooey zap it for 10 more seconds)
Remove and enjoy!
