Perfect Any Time…..
I love having recipes that aren’t just for summer, or fall, a party, or alone time. I like recipes that encompass every single moment, holiday, and season! Today’s recipe does just that. You can either indulge all by yourself, or serve these little cuties at a party, eat them as a cool dessert at a BBQ, or munch on them in front of the fire while snow is piling up outside the door. And the absolute best part is they are 100% GUILT FREE! How can you go wrong with that?
Cheesecake is one of those desserts that is reserved for special occasions because they are so high in sugar and fat, and can run you anywhere between 250 – 400 calories or more per piece, not to mention over 22 grams of sugar! These minis give all the same flavor without all the guilt. Each of these little minis will only cost you 85 calories! You can’t say no to that.
I also don’t like recipes that are super complicated, or take a long time to make. Who wants to spend hours in the kitchen making ONE recipe? As much as I love to cook, I prefer to keep each recipe, hands on, under 30 minutes. Some take longer to cook, but I can do other things during that time. This recipe on the other hand, you can create the entire recipe from start to finish in about 30 minutes. For years I have always used chocolate cookie, or graham cracker, crusts for my cheesecakes, but this time I decided to opt for a healthier, but just as tasty variation. I used sweet whole grain crackers. I know, you are probably thinking that won’t even taste good, but you’d be wrong. These crackers work perfectly!
You might recognize two components of this recipe from last week. I took my Sweet Greek Cream Cheese Fruit Dip recipe, and Dark Sweet Cherry Topping recipe to create a whole new recipe. So, the total amount of ingredients you’ll need for this recipe is just 7! With just 7 ingredients, 35 minutes or less from start to finish, and guilt free. These mini cheesecakes are like a dream come true! 😉 Take a minute to throw them together, sit back, relax, and enjoy!

Sweet Cherry Cheesecake Minis

6 large sweet whole grain crackers (or crackers of your choice)
3 ounces’ Greek cream cheese
½ cup Greek yogurt
1 Tablespoon Truvia zero calorie sweetener
2 teaspoons vanilla flavoring, or extract
1 cup frozen sweet dark cherries
1/8 tsp lemon juice
Cheese cake layer
Place cream cheese, yogurt, Truvia, and vanilla in a mixing bowl (fairly deep so it doesn’t make a mess) and blend thoroughly with a hand mixer
Place the frozen cherries in a small sauce pan
Bring to a boil over medium heat, and reduce to a simmer, stir occasionally
Simmer for 20-25 minutes
Remove from heat and add the lemon juice; combine
Let cool in the fridge
Layer each cracker with 2 Tablespoons of cheesecake and 1/6 of the cherries. Enjoy!
