Say Hello to Summer….
With the temperatures soaring into the 80’s there really wasn’t any question what had to be done. It is “Nicecream” time. I’m sure you have heard of it. It has been swamping the internet for the last couple of years, and every healthy foodie has their own version. I figured, being one of them, it was my turn to share my version with you! Whether you like healthy food, or not, I think that you’ll be pleasantly surprised at how good this stuff tastes!
You can’t get any simpler than this recipe. There are only 4 ingredients, this recipe is clean, clean, CLEAN! There are only 96 measly calories in a 1 cup (2 scoop) serving, no added sweeteners of any kind, healthy carbs, and best of all…. It tastes completely naughty!
You can really swap out the blueberries with any other frozen fruit of your choice, I just happened to have a big bag of blueberries in the freezer that I have been using in pancakes, muffins, and on my Greek yogurt every night as dessert. I figured, why not?! The choice was a good one. I used my blender, but I can tell you that a food processor would probably be easier. This recipe is pretty thick so my blender was struggling at the end, and it is a high end, hard core ice chopper. I just used a spatula and stirred it up a couple of times and it was fine.
One of the best parts about this dessert is you can serve it right away, or you can throw it in a sealed container, pop it in the freezer, and use it whenever you want! It scoops just like ice cream. 😉 The second best part, you can top it any way you want. I used a carrot peeler and peeled off mini ribbons of dark chocolate to sprinkle over the top paired with shredded unsweetened coconut. Yummers! As far as the milk is concerned I was going to use coconut milk, but didn’t have any on hand (I need to make another batch.) but I did have some whole milk in the fridge so I used that. I can tell you from past experience that the higher fat content your milk has the creamer your nicecream will be. If you use almond milk, or skim, you will end up with icey vs creamy. Just remember no matter which milk you choose, or what exotic toppings you pick, once it is made you can just sit back, relax, and enjoy!
Creamy Blueberry Nicecream

Ingredients
3 medium bananas – peeled, cut up, and frozen
1 cup frozen blueberries (Not wild ones unless you like really tart)
1 cup milk plant based milk
1 teaspoon vanilla flavoring, or extract
Directions
Toss the frozen bananas, blueberries, and milk in a blender, or food processor
Blend until creamy, stirring as needed (It will be really stiff)
Scoop into a plastic container and stir in vanilla
Serve immediately or cover and place in the freezer for up to 2 weeks
1 serving (1 cup) = 98 calories
