You Can’t Go Wrong……
There are a couple of types of recipes that every healthy foodie has a massive variety of. Smoothies, protein bars, and energy bites. The internet is overflowing with these recipes, but the smallest change can cause a new taste sensation! Last year I created a few different energy bite recipes including Dark chocolate truffles, Crunchy dark chocolate energy bites, and Date breakfast bites. So far this year I have done a few protein bars, and thought it was about time to bring you another energy bite recipe. You can’t go wrong with these healthy treats; they work on so many levels.
I think what I like most about bites, as opposed to protein bars, is they are just a couple of bites. (But don’t get me wrong… I love protein bars, too!) Also, they are cute, and they hold so many good ingredients. You can add just about anything you want to them and they will taste good. You can’t really go wrong. I love using the base mix of peanut butter, honey, and oats and then just going crazy from there. The only thing you have to be cautious about is these little babies, like protein bars, can get really calorie dense super-fast. You want to be aware of how many sugary ingredients you are adding as well. Try to limit your dried fruits, and chocolate, and stick to more seeds and nuts.
This particular recipe is pretty basic, but it has just the right amount of crunch, and chew factor going on. I’m a texture person, while I can’t handle anything jiggly, or soft, I am all about crunchy, and chewy. I like multiple textures in my cookies, bars, and bites. I used old fashioned oats in these bites, but you could absolutely use quick oats. I also used semi sweet mini chocolate chips, but dark chocolate chips would be better. (I need to restock my pantry.) These are quick to make, and are super easy. You might even already have all of the ingredients in your pantry! Go ahead and check, then you can whip up some bites, and sit back, relax, and enjoy!

Chocolate Cherry Energy Bites

Ingredients
½ cup natual crunchy peanut butter (or a nut butter of your choice)
2 Tablespoon honey
1 ½ cup old fashioned oats – raw
2 teaspoons mini chocolate chips
2 Tablespoons dried cherries
½ ounce (12) raw almonds – chopped
Directions
In a medium bowl combine the peanut butter and honey until uniform
Stir in the oats, chocolate chips, cherries, and almonds
Using a cookie scoop, or rounded Tablespoon scoop the mixture level with the scoop and press firmly (This will push down to approximately ¾ of the scoop) Press them as firmly as you can so they don’t crumble
Repeat 18 times
Place on wax paper in a dish in the refrigerator for about 15 minutes until firm
Enjoy!

I’m on a spree with cherries – bought them for the black rice recipe and getting a lot of good use out of them! I DID get the real black rice and will attempt that again! (you’ve expanded my options) 🙂
