Simplicity…..
Today’s recipe is all about simplicity. Sometimes the simplest recipes are the best recipes. Now that strawberries are in season I am going crazy buying them. They are so sweet and delicious and are a great treat all on their own. But sometimes you feel the need to get a little fancy, simple, but fancy. Is there ever really a wrong time for chocolate dipped anything?! Especially if you are using dark chocolate? This time I figured I would add a little panache and add some chopped, lightly salted almonds. It was a good choice. No, wait, it was a great choice!
Generally, when I dip strawberries I cut off the top and dip the entire strawberry. (Husband’s request. 😉 ) Today I wanted just the subtleness of chocolate with the perfect sweetness of the strawberry, and the light hint of salt and crunch from the almonds. I know this seems like something that is more in the venue of Valentine’s day, but can’t every day be Valentine’s day, even if it just for you. No one said you had to share these. 🙂
The ingredient list is 3 ingredients, super clean, super simple, and super speedy!
You can buy your almonds already chopped if you want the process to be even quicker, but I just grabbed some whole almonds out of the pantry and gave them a quick chop. They are such an easy snack I generally have a couple of different types on hand. For the chocolate I just used 1 square of dark chocolate. I happened to use Private Selection this time, but you can use any brand that you would like and you can go as dark as you would like. I used 2 large strawberries and 3 small, so called them medium, you pick the size! When it is all said and done you will have a perfect snack for just you, or to share (honestly, are we really going to share?), so you can sit back, relax, and enjoy!

Almond Studded Dark Chocolate Dipped Strawberries

5 strawberries
Ingredients
5 medium strawberries – stems on
1 square dark chocolate
6 lightly salted almonds – chopped
Directions
Wash, and dry, your strawberries
Melt the chocolate in a microwave bowl in two 30 second increments
Place chopped almonds into a bowl next to the melted chocolate
Using a spoon drizzle the chocolate over the bottom half of the strawberry, then roll in the chopped almonds; repeat
Place each strawberry onto wax paper until they harden (about 5 minutes) Either serve, or store in the refrigerator
1 strawberry = 25 calories
This looks good, plus I have strawberries and the chocolate that was never used on the bananas – thanks for another idea that might be more my lazy speed. 🙂 I don’t have a microwave and have ruined whole batches of chocolate – a square is less intimidating!

Dark chocolate melts really fast so just keep it on medium low and stir until it melts. I never use a double boiler if I use the stove because any steam/moisture makes the chocolate clump. (Another reason to make sure those berries are dry!) 🙂

Love it! And, yes, simple, recipes are the best. I like the idea of adding a little salt. That would make nuts taste even better. I cannot wait for strawberries season over here 🙂

Mmm, there’s nothing like chocolate covered strawberries, but chocolate covered strawberries dipped in almonds! Yum!
