Simple & Sweet……
Friday night I was scrolling through my news feed on Facebook and I saw a recipe that looked crazy good! So, I tagged my friend Jennifer, who is also my “foodie soul mate”, and she said, “We need these in our lives”. Done! That is all she had to say. I was on a new mission to redesign these little balls of chocolate goodness and make them “ours”. I wanted to minimize, and clean up the ingredients, and she asked if I was going to make them healthier. But of course! I didn’t try the original recipe, but the ones I made were amaaaaaaaazing! I made a small batch on Saturday, then made a full batch yesterday. It was necessary. All the prototypes mysteriously disappeared. 😉
I remember as a kid I couldn’t even fathom the thought of coconut and chocolate together. To me it was just a combination that was gross. My mom loved Mounds, and German chocolate cake. I guess I really didn’t like coconut period because she used to buy the Hostess Snowballs and at Easter she would make this bunny cake that was covered in coconut for the fur. She never had to worry about me touching either one. Anything with coconut was on my short list of “not going to eat it”. Funny how our tastes change. Sometimes I wish that I didn’t like as many combinations as I do now, it would sure be safer!
Generally, bonbons are not known for their health factor. They taste good, they are indulgent, and they are basically sugar. A regular coconut bonbon serving of two runs about 200 calories with 20 grams of sugar! Mine are 128 calories with 6 grams of sugar if you use sweetened coconut. If you use regular coconut you are only looking at 71 calories per serving with trace amounts of sugar! You can’t beat that!
I have to admit that I am the only person in my house that likes coconut, and I’m kind of glad. That means I don’t have to share these little pieces of Heaven. To me they taste like coconut ice cream covered in silky chocolate. The ingredient list is short, the turnaround time is quick, and these are so super easy to make. Don’t share with your friends or they will be asking you to bring them to all of the functions! In saying that, while I think you should absolutely spread the word about these little goodies, make sure you keep the first batch a secret, so you can sit back, relax, and enjoy!
Dark Chocolate Coconut Bonbons

½ cup coconut – shredded (You can use sweetened or unsweetened)
2 Tablespoons coconut oil – chilled
½ teaspoon vanilla flavoring
2 squares dark chocolate (I used 73% because it is what I had on hand, but I prefer 83%) (7 oz or 200 g)
In a medium bowl cream together the shredded coconut, coconut oil, and vanilla until combined
Roll into 10 little balls (Each about a heaping teaspoon)
Place on a tray, or dish, and freeze for at least 10 minutes
Melt the chocolate in a microwave safe dish stirring every 30 seconds. (Usually takes 90 seconds)
Remove the bonbons from the freezer and using a small spoon carefully roll each ball in the chocolate placing it back on the tray (That last one might be a little tricky to cover without scraping the bowl)
Patch any little white spots with remaining chocolate
Put the tray back in the freezer for another 5-10 minutes
Store the bonbons in a plastic container, or plastic bag in the freezer. These are not counter stable for long periods of time
I enjoy them frozen, they taste like coconut ice cream, they are about 3 luxurious bites, or you can let them sit on the counter for a minute or two to soften before you eat them.
