brownies4This weekend I was having a serious chocolate attack. I’m a vanilla girl, but once in a while chocolate calls my name. When I went to the pantry to see what we had I was quickly reminded that I don’t buy junk. All that was in there was ingredients. 😦 I guess that is good because you really, REALLY have to want something to make it yourself. If it isn’t there to grab you have to put a lot more effort into it. I guess that is kind of like earning it right? 😉

brownies3I pushed through the weekend and ended up deciding yesterday that I truly wanted something chocolate. It turned into a need, everyone’s lives depended on it, and I went on a mission. I decided I wanted to make some low calorie, refined sugar free brownies packed with nuts. I have also seen my Facebook news feed just flooded with versions of Girl Scout Samoa cookies and so I thought that adding some coconut to the top of the brownies might get my eyes away from all those gooey pictures. I know low calorie and sugar free doesn’t sound like it goes with brownie, at least not moist, cakey, gooey brownie, but it does. And I proved it!

Generally, brownies can run anywhere from 120 – 400 (Yes, I’m talking about you Starbucks) calories. That is just a plain Jane chocolate brownie. Plus, they are usually just loaded with sugar, and loaded with carbs (around 20 grams). These amazing brownies only have 114 calories, are refined sugar free, and only have 7 NET carbs! This is a brownie that anyone can get on board with!

brownies5You’ll notice in the picture that there are two different pans. One pan has coconut, the other mini chocolate chips. Each pan made three brownies, and since I like coconut and my husband likes chocolate chips I split them up. Why did I make such a small batch? So I wouldn’t eat them all! 😉 I also find that a lot of times when it comes to cakes, or brownies, the smaller the batch the moister they are because it doesn’t take as long for the center to bake. These guys baked up in just 15 minutes! Since it only took them 15 minutes to bake these would be perfect for any chocolate attack. If you are feeling really adventurous they would be outstanding served warm with a scoop of vanilla bean frozen yogurt, possibly some sugar-free chocolate sauce, and maybe a little whipped cream. You choose, then sit back, relax, and enjoy!

Almond & Walnut Studded Coconut Fudge Brownies

Ingredients

¼ cup Truvia zero calorie sweetener

3 Tablespoons salted butter – Room temperature

1 Flax Egg (1 Tablespoon of ground flax meal + 2 Tablespoons water) or 1 egg

1 teaspoon vanilla flavoring, or extract

3/8 cup wheat flour (Use scooping method, fluff flour)

3/8 cup unsweetened cocoa powder – sifted after measuring (Use the same method as the flour)

½ teaspoon baking powder

2 Tablespoons + 2 teaspoons milk

1 Tablespoon walnuts – chopped

1 Tablespoon almonds – chopped

2 teaspoons coconut – shredded

Directions

Pre heat the oven to 350’f

In a medium bowl cream together the Truvia and butter

Stir in the vanilla and flax egg, or regular egg

Add in the flour, baking powder, and unsweetened cocoa; mix until combined

Pour in the milk and mix until the milk and flour/butter mixture is incorporated

Fold in the walnuts and almonds

Separate into two mini loaf pans, or one small square pan

Sprinkle coconut over the top

Bake for 15 minutes, or until a toothpick can be inserted and removed with a few moist crumbs

Cool pans on a baking rack, remove the brownies when they are fully cooled

Store in an airtight container, or freeze

114 calories per brownie
