double chocolate protein bars3Happy Monday everyone! I hope that everyone had a wonderful, even though it was freezing, Valentine’s day yesterday! We don’t really celebrate Valentine’s day, but I have to admit that I had Blueberry cheesecake on my mind all day. I mentioned it to my husband, and he frowned. He has been doing so good with his training that I haven’t made him cheesecake in a while, so this week it is my mission to whip up a cheesecake that won’t crash the whole deal, unfortunately that isn’t what I am bringing you today. Sorry. 😦 BUT that gives you something to look forward to in the near future!

protein bars chocolate chip4Instead of cheesecake I made his weekly batch of Double Chocolate Protein bars, a very close cousin to my Chocolate Chip Cookie Dough Protein bars. These bars were born when Special K went from being $1.99 on sale to over $4.00 a box! I couldn’t, and wouldn’t, spend that even on my favorite cereal. (Which is sadly also over $4.00 a box.) So, I put on my thinking cap and decided it was time to improvise, and wouldn’t you know it, he likes these ones better. I like them both equally, but these are thicker with a bit firmer texture.

These are only double chocolate because I prefer vanilla protein powder, but I bet you could make them triple chocolate if you only have chocolate protein powder on hand. I did use semisweet mini chocolate chips in this recipe, but if you have cocoa nibs, or dark chocolate I’m sure it would be just as good. You really can’t go wrong as long as you are making it chocolate, chocolate, chocolate!

double chocolate protein barsI just can’t tell you how easy these bars are to make! Don’t let the seemingly long list of ingredients detour you from trying these. It really is kind of like a dump cake, but a bar. You dump everything together and combine! They are less expensive than the boxed bars, and you are able to control what goes into them. Grab a bar as a snack, or after a workout, sit back, relax, and enjoy!

UPDATE: To make these bars plant based use Pea protein powder in place of the whey and non dairy, or grain sweetened, chocolate chips.

Double Chocolate Protein Bars

Ingredients

¾ cup + 2 Tablespoons crunchy natural peanut butter

1 Teaspoon vanilla flavoring or extract

1 ½ cups bran flakes cereal – ground

1 scoop (49 g) Vanilla protein powder (I used Body Fortress) (Or pea protein powder for WFPB)

1 Tablespoon ground flax meal

2 Tablespoons raw cacao powder – sifted

2 Tablespoons powdered Stevia

¼ cup water

1 Tablespoon mini dark chocolate chips (non dairy for WFPB)

Directions

In a medium bowl cream together the peanut butter and vanilla

Stir the ground cereal, protein powder, flax meal, cocoa powder, and Stevia into peanut butter mixture and combine well (You may not be able to get all of the powder combined right away) Add water 1 Tablespoon at a time until the mixture becomes a soft dough, fold in leftover chocolate pieces

Dump the dough onto wax paper and using the wax paper, and your hands, flatten out the dough into a square, fold the wax paper over and gently roll with a rolling pin, then shape sides again. (approximately 6×6”)

Sprinkle chocolate chips over the dough and fold the wax paper over and lightly press down with your rolling pin

Fold all four sides of wax paper over and chill in the refrigerator

After about 30 minutes remove from the fridge, cut into 8 bars, and store in a sealed container in the refrigerator
