I hadn’t really planned on making any new recipes today since I was so busy, but seeing everyone posting Valentine’s day items really made me want to do something. I procrastinated all day, then finally decided to help out anyone who might be doing the same thing. I wanted to make a quick dessert that could be thrown together, and on the table in less than 30 minutes. Mission accomplished! I am going to apologize already for there not being any roses, or strawberries, or anything “lovey” in the pictures, this was a spur of the moment recipe to prove that ANYONE can have a luscious dessert in no time flat!
7 minutes to make and 20 minutes to bake!
I decided to make the infamous lava cake. I wanted it to be as simple, and straight forward as possible. Most of the ingredients are probably already in your pantry, and if they aren’t, you can absolutely swap something out. For example, I used coconut oil, if you don’t have any you can use a different oil. I used dark chocolate for the center, but if you don’t have any on hand you can use ½ Tablespoon of chocolate chips. You may think it is a little crazy that there aren’t any eggs in this recipe, but I didn’t have any, so I swapped the egg I would normally use and made a “Flax Egg”. This is simply 1 Tablespoon of flax meal mixed with 2 Tablespoons of water and it easily replaces an egg. (This way you can also lick the bowl when you are done. 😉 )
I don’t want to spend a whole lot of time rambling about this recipe since it would defeat the entire purpose behind a quick recipe. I sifted a little bit of powdered sugar over the top as a garnish, but you could use whipped cream, ice cream, or berries, OR all three! 😉 We don’t really celebrate Valentine’s day, but I couldn’t eat this alone, so I split it with my husband. He loved it, so hopeful your sweetheart will too. You can’t go wrong with a wonderfully moist chocolate cake overflowing with a molten chocolate center! Don’t spend a whole lot of time in the kitchen, just throw this together, so together you can sit back, relax, and enjoy!
Super Quick Lava Cake

1 cake
Ingredients
¾ Tablespoon coconut oil – melted
3 Tablespoons of sugar or 2 Tablespoons Truvia zero calorie sweetener
1 Tablespoon ground flax meal + 2 Tablespoons water (Flax egg)
1 teaspoon vanilla flavoring or extract
3 Tablespoons unsweetened cocoa powder – sifted after measuring
5 Tablespoons all-purpose white flour
½ teaspoon baking powder
1/8 teaspoon salt
¼ cup water
½ square Ghirardelli 83% dark chocolate – broken in two pieces
Directions
Pre heat oven to 350’f
Spray a 10-ounce ramekin with non-stick cooking spray
In a medium bowl melt the coconut oil
Add the Truvia, “flax egg”, and vanilla to the coconut oil; stir
Stir in the flour, cocoa powder, baking powder, and salt
Add water 1 Tablespoon at a time until fully mixed
Pour batter into prepared ramekin
Place the two pieces of dark chocolate standing in the middle of the batter
Place in the preheated oven for 20 minutes
Remove from the oven and careful invert onto a serving plate
1 cake 360 calories
