Are you ever looking for a crunchy snack, but you don’t want to go in the chip direction? Or maybe you have a beautiful bowl of hearty soup that needs a little companion. I just really wanted a snack that my kids would eat, and something crunchy that I could put peanut butter on. 😉 I won’t lie, sometimes celery just won’t do it. I wanted a nice crunchy cracker and since I have eliminated just about every boxed item in my pantry I had to make my own.
About a year ago I tried making crackers. Truth be told, I was less than impressed, my kids wouldn’t touch them with a ten-foot pole, and they just didn’t meet my cracker criteria. When I eat a cracker I look for two specific must haves. First I have to have crunch. There are no ifs ands or buts about it. Crunch is my number one must! And second I want them to be flakey. So, crunchy and flakey we have it made. The first time I made crackers I failed to roll them thin enough so they were soft and well…. Chewy. If I can give you any tips on how to make these crackers successful roll them thin, thin, thin!
Your traditional store bought crackers are pretty high in sodium, almost double the carbs, and lots of additives that you probably don’t want, or need. With this simple recipe you use 4 ingredients and you can eat 11 nice size crackers for only 100 calories.
Depending on where you are in your food journey these may taste slightly bland. You can always add more salt if you’d like. Or you can add different seeds for an added crunch, and punch, of nutrition. Once these are cooked they can be kept in a sealed container in the pantry for over a week. I’m looking forward to trying several different variations in the near future so be on the lookout for some big flavor! Crispy Wheat Crackers
1 c stone ground whole wheat flour (I used Hodgsons mill)
1/8 teaspoon salt
2 Tablespoons light butter
¼ cup water
¼ teaspoon Sugar 2.0
Pre heat oven to 400’f
In a medium bowl combine your flour and salt, and Sugar 2.0 if using
Cut in butter until crumbly
Slowly add in water 2 Tablespoons at a time until a dough ball forms
Place ¼ of the dough on a floured surface and roll until it is thin. If you think it is thin roll just a little bit further (Not thin enough and they will be chewy instead of crunchy)
Cut the rolled out dough into squares and pierce with a fork
Place dough squares on a cookie sheet
Cook for 6-8 minutes until lightly brown (The crackers will continue to crisp as they cool)
Repeat with the rest of the dough
1 serving (11 crackers) is 100 calories
