Stop Crying Ladies……
Since January 1 I have been listening to the moans of women all over mourning the fact that their beloved chocolate doesn’t fit into their New Year’s resolutions. I don’t like to reuse old recipes to often unless I’m hearing requests, so at the cries of my fellow women I am giving you an answer. A solution. A green light to eat chocolate if you will. A way to eat chocolate, and make it count!
Sure you can drink a chocolate protein shake, or eat a piece of smooth dark chocolate, but there is nothing quite like the indulgence of a chocolate truffle. Yes, you heard me right, creamy dark chocolate truffles….. and I am encouraging you to eat them. And the best news of all is that these little guys will fit right into your healthy eating resolution, and it will feel like you are cheating a little bit!
Now for the calorie count, I know this is what you are waiting for. Drum roll please! If you were to eat a Lindt truffle it would cost you about 74 calories! You can eat TWO of these truffles for just a little bit more. Depending on whether you are eating a walnut, or coconut, truffle your calorie count will range between 80 – 88 calories. You can’t beat that!
With these simple ingredients you have an amazing treat waiting for you! (You can always freeze them if you want a harder truffle)
10 Medjool dates pitted
1/3 cup water
¼ cup unsweetened cocoa powder (I used Hershey’s. Quality does matter)
2 teaspoons Stevia in the Raw
Optional to roll the truffles in (I did ½ and ½)
½ cup walnuts – chopped small
½ cup shredded coconut
