I don’t know what it is about miniature things, or portable foods, that I just absolutely love, but I do! I guess I like portability for my kids, and I like miniatures because then I get to trick my brain into thinking that I’m eating more! Call me crazy, but I’d rather eat two small items rather than one big item. 😉 Another plus is that they are easier to pack if you take lunch to work, or snacks when you leave the house.
I had some leftover egg roll wrappers in the freezer from when I made my Baked Chicken Egg Rolls a week or so ago. I kept pondering what I wanted to do with them and then it came to me, I wanted to make a dessert with them. They are made up of only a few ingredients, all whole foods, so they are good replacement for something like pie crust. Do you see where I’m going with this?
I decided to make Apple Pie Egg Rolls. Two egg rolls are a serving and are 216 calories with 7 grams of protein, 3 grams of fat, and 43 grams of carbs. A piece of apple pie starts at around 296 calories with only 2 grams of protein, a whopping 14 grams of fat, and 43 g of carbs. (Luckily most of the carbs are healthy carbs in the egg rolls)
These dessert egg rolls are so super easy, and really quick. I recommend cooling the filling slightly, but I was in a hurry so I tossed it in a bowl and put it in the fridge for a few minutes. While I was waiting for it to cool I whipped up a quick batch of unsweetened whipped cream. I could have sweetened, or flavored it, but the nice mild creaminess was an amazing complimentary addition to the sweet, cinnamon, caramel taste of the apple filling. You can keep them in the refrigerator and when you are ready to eat them just pop them in the microwave for 5-10 seconds and they are perfect for dipping in some homemade whipped cream. Take a minute for a miniature dessert, sit back, relax, and enjoy!
Apple Pie Egg rolls

1 small Gala apple – Diced
½ Tablespoon butter
½ teaspoon ground cinnamon
2 Tablespoons water
2 Tablespoons instant oats
6 Egg roll wrappers
Pre heat oven to 400’ f
In a small fry pan melt the butter and add the chopped up apple.
After a 1-2 minute sautee in the butter add the water and cover for 3-5 minutes to soften the apples
Remove the lid and add the brown sugar and cinnamon; stir until all of the water is gone
Fold in the instant oats
Cool filling slightly
Place 1 Tablespoon of filling about an inch from the corner of the egg roll wrapper, fold the corner over the filling to the center, fold in the side, and wrap tightly
Repeat 5 more times
Place on a baking sheet and cook in your pre heated oven for 10-12 minutes (You will see them crisping and browning)
Serve with fresh, unsweetened whipped cream
