Indulge & Energize……
Well, I did it! I mentioned the other day that it either needed to snow or warm up, and it decided to snow. I could hear the wind all night and this morning when I looked outside it was a little rainy. After I did my morning workout I peeked out the window and yelled at my husband, “Have you looked outside this morning?” It was a literal blizzard out there! Of course the kids got super excited and they wanted to go out and play, but it is the kind of snow that is just super wet. No fun to play in, just to get soggy in. It may as well be called white rain. But that is ok, it is Sunday and I have things that need to be done inside anyways.
Still sticking with my extra goals for this year I am creating new figure friendly recipes on a daily basis that are EASY, and SPEEDY! If you are already exercising, going to work, and fulfilling all of your other obligations the last thing you want to do is spend a lot of time in the kitchen. This is also what causes people to give up on their nutrition, and fitness, goals. They think that they need to take a lot of time in the kitchen to eat healthy. It isn’t true. Energy bites are fun, easy, and super indulgent!
This recipe is so super easy, NO COOKING INVOLVED! Not on the stove, not in the oven, not even in the microwave. You literally toss all the ingredients into a bowl, mix it, and roll it into balls. You can’t get any easier than that. As far as the taste they remind me of a crunchy truffle. I can’t lie, they are so super yummy it is ridiculous. When I eat something that I find satisfying I have to have crunch, it is just an absolute must. These energy bites are crunchy, crunchy, crunchy!
Let me break it down for you to show you how packed with good stuff these energy bites are. Each bite is only 97 calories, contains 3 grams of fiber, 3 grams of protein, 3 grams of sugar, and 6 grams of net carbs. These little treats are crazy clean, and will make you feel good about what you are eating.
So, if you are working toward new goals, building on old goals, or just want something crazy good to snack on, give this recipe a shot. When it comes to the chocolate make sure that it is 80% or darker so you can get all the benefits. I wanted to use cacao nibs, but didn’t have any so I just chopped a few squares of intense dark instead. I did use raw, unfiltered honey which is filled with antioxidants, and phytonutrients. The chia seeds, and oats, are a great source of fiber. I generally use old fashioned oats, but these little bites worked better with quick oats. But most important of all, when you eat these little bites of energy, sit back, relax, and enjoy!
Crunchy Dark Chocolate Energy Bites

½ cup natural crunchy peanut butter
½ cup quick oats
2 Tablespoons chia seeds
2 Tablespoons raw honey
2 Tablespoons unsweetened cocoa powder (The brand DOES make a difference)
2 squares 86% dark chocolate (I used Ghirardelli 86% Intense Dark) – Chopped
Combine all the ingredients in a bowl, mix well
Using a 1 Tablespoon cookie scoop, or rounded Tablespoon, scoop mixture onto wax paper
Roll each scoop into a nice tight ball
