Husband Inspired -CPB Magic Middle Bites

cpb bites7Sometimes our “ah ha” moments come in the weirdest way. I had one the other day which was brought on by my husband, and resulted in an amazing recipe. (I’ve actually had quite a few of these. He has really inspired quite a few of my top shelf recipes.) I had seen a recipe with a peanut butter cup inside a cookie. I thought that was an amazing idea, so I used my chocolate shortbread cookie dough, wrapped it around mini peanut butter cups, and bam, had my version of a cookie with a peanut butter cup in the middle. I gave them to my “taste tester” to try and he said they were really good, but then I told him that they had peanut butter cups in the middle.

cpb bites5This is where the moment occurred. He said, “That isn’t how you do recipes. Yours are original, not like anyone else’s”. That is true, that is what I was going for. He asked me why I hadn’t just stuck peanut butter in the middle of a cookie instead of using a peanut butter cup. For some reason I wasn’t able to wrap my mind around the concept of how I would do that and then the wheels began to turn. I wanted both the soft peanut butter, and gooey chocolate, to be in the center of the cookie just like it had been with the peanut butter cup, and that is when the journey began. I was then determined to make my “husband inspired CPB magic middle bites”.

cpb bites9cpb bites8These cookies may sound time consuming, but they are so worth it, and taste so much better than using the peanut butter cups, not to mention, they are one of a kind. 😉 These cookies do take a lot of chilling, but if you are doing other stuff around the house, it shouldn’t be a problem. I did laundry, and dishes, fed the kids, you know…. All that kind of stuff. Don’t let the amount of chilling time detour you, you will be in love when you take a bite, and you will wow anyone you choose to share with… if you choose to share. 😉

The CPB (Chocolate Peanut Butter) middle may seem small, but as you build on that little piece of peanut butter they grow and grow. And most cookies like this are over 110 calories with a ton of sugar. These guys are only 79 and the sugar is reduced considerably!

cpb bites7Put together a list of 5 or 6 different cookies you want to make for a Christmas platter and make sure these are on there. While you are making the other cookies you will have plenty of time to do all the chilling that is necessary. 🙂 Just make sure that when you do make them that you eat one right after you roll it in the powdered sugar. Pull it apart and watch the peanut butter ooze from the cookie and the chocolate just goo all over. (That is part of the fun of being the one making them.) But most of all, when you are done, make sure you sit back, relax, and enjoy!

CPB Magic Middle BItes

Serves 20

Ingredients

CPB Magic Middle

20 – ½ teaspoons chunky peanut butter

6 Tablespoons chocolate chips – Melted

Cookie Dough

½ cup light butter – room temperature

¼ cup Truvia zero calorie sweetener

2 teaspoons vanilla flavoring or extract

¾ cup white all-purpose flour

¼ cup unsweetened cocoa powder

For rolling

4 Tablespoons powdered sugar + ¼ teaspoon unsweetened cocoa powder sifted together

Directions

Using a rounded ½ teaspoon measure 20 level ½ teaspoon scoops on a wax paper covered tray or plate and place in the freezer (I left mine in there for 30 minutes the first time and it worked well. The second time I left them over night and it worked better)

In the microwave melt the chocolate chips in a microwave safe bowl in two 30 second increments, stirring between. Remove from the microwave and stir until all of the chocolate chips are melted and smooth

Remove peanut butter balls from the freezer and dip them in the chocolate and returning them to the wax paper. (If you have enough left you can double dip them)

Place back in the freezer for at least 30 minutes

Cookies

Pre heat oven to 350’f

In a medium bowl cream together butter and Truvia

Mix in vanilla

Combine butter mixture with flour and cocoa powder (If mixing by hand make sure the cocoa powder is sifted)

Chill for 30 minutes (Again I used the freezer to chill them fast)

Remove CPB middles and cookie dough from the freezer

Portion out cookie dough into 20 chunks just to make sure you use it evenly

Flatten each portion out, wrap it around a CPB middle, and roll gently in your hands, return to the wax paper

After you have rolled all 20 return them to the freezer for 30 minutes (This is so they don’t spread)

Place on a non-stick cookie sheet

Bake for 8-10 minutes

Remove from the oven

When they are cool enough to handle gently roll them in powdered sugar mixture

Enjoy!
