Round Up & Black Friday Energy……

cereal bars2Is everyone ready for tomorrow? We don’t celebrate big for Thanksgiving here, we just enjoy being with each other, just the four of us. All our family lives far away so it is just us, and you know what? That is ok. 🙂 cereal bars6Now for those who plan on going out the day after Thanksgiving and trying to survive the mad rush of Black Friday I don’t know if I tip my hat to you for your bravery, or outright insanity! I will admit, I have NEVER gone out on Black Friday. There is nothing I want bad enough that I am willing to brave the cold and the crowds at 4:00 am for. 🙂 For those of you that are going out, go out prepared! I am handing you a NO BAKE cereal bar that is packed with energy, only takes minutes to make, and you can grab on your way out the door! (Don’t forget to add a little of that left over whipped cream from your pumpkin pie to the top of your coffee for a little added zing!)

cereal barsIf you are going to go out in the craziness that is Black Friday make sure your stomach is full, you’ve had your coffee, and you are wearing your running shoes! The recipe I am going to share with you today will get you through your shopping trip full of energy, and without being hungry. I initially made these breakfast bars on a whim. I bought a bunch of boxes of Special K cereal when they were on sale at Kroger and I accidentally grabbed one that has chocolate flakes. I absolutely detest chocolate cereal in any way, shape, or form! cereal bars7I thought I had grabbed all of the chocolate lovers with chocolate bits and strawberries and VANILLA flakes, but no somehow this box of cereal with chocolate flakes snuck in there. For those of you who know me, or have been reading my blog log enough, you know that I hate waste. To waste food is like throwing money down the drain to me, I just can’t do it. I figured there had to be some way to repurpose this cereal so it wouldn’t just sit in the pantry and not get eaten. (It was already open otherwise I would have donated it with our other food donations.) Then it dawned on me, cereal bars, and I am so glad that I gave it a shot! The best part is, you can actually use any cereal that you have for this recipe. (You know when you have 10 boxes and each only has ¼ cup of cereal left in the bottom, or crumbs.) Easy No Bake Breakfast Bars

Ingredients

3 cups Special K chocolate almond cereal (2 cups ground) (Or cereal of your choice)

1 cup chunky peanut butter

2 Tablespoons light butter

2 teaspoons vanilla flavoring or extract

2 teaspoons Truvia zero calorie sweetener

Directions

In a blender blend 2 cups of cereal to flour texture

In a small sauce pan melt together peanut butter, butter, vanilla, and Truvia

Stir in ground cereal and whole cereal

Pat into a square casserole dish (You may need to spray your fingers with non-stick cooking spray to keep the mixture from lifting) Make sure to press firmly

Let mixture cool and cut into 16 square/bars

133 calories per bar
