Just as Creamy Without the Additives…..
I will admit it, I’m a coffee drinker. It isn’t so much for the caffeine, because I drink decaf to, but it is more of the experience. I never thought I would say that I enjoy the taste, but I actually do. And the type of coffee you drink does make a difference as far as taste, and enjoyment, and if you have a really bad bean nothing is going to help it. I use to drink my coffee black, but over the years I gravitated toward the creamier and sweeter coffee experience. As I mentioned in my Homemade Evaporated Milk post I use to buy Coffee-Mate Sugar Free Sweet Cream coffee creamer. The price was horrible, so I only bought it when it was on sale, and then I read the ingredient label and that sealed the deal for me!
So, now I make my own. It costs less, it has zero preservatives or additives, the ingredient list is really short, I always have the ingredients on hand, and best of all IT IS EASY! It takes less time to make than if you had to grab your keys, get in the car, run to the store, go through self-checkout, come back home, and open the bottle. 🙂 Yes, it is really that easy.
It took a little less time before I started making my own evaporated milk (I have to stop reading labels), but in all reality even that isn’t very time consuming because you can do other things while you are making it. There isn’t even a lengthy process that I need to explain, I don’t even need to give you a list, and you probably have everything right in your kitchen. Evaporated milk, unsweetened vanilla almond milk, Stevia, and Vanilla extract or flavoring. It keeps in the fridge for 10-12 days. (Keep an eye out for my holiday creamers that will be showing up in the near future!)
Sugar-free Vanilla Creamer

1 cup of homemade evaporated milk (or 1 can if you don’t care about the additives)
2 ½ cups of unsweetened vanilla almond milk (I use Kroger Simple Truth because it doesn’t have Carrageenan added to it like other brands)
2 Tablespoons of Stevia in the Raw
2 Tablespoons of Vanilla flavoring or extract
Combine all of your ingredients in a measuring cup with a spout, stir, and pour into a bottle with a lid
Keeps in the refrigerator for 10-12 days
27 calories per serving (2 Tablespoons)
